Kodiak Salmon

Ingredients

  • 1 Salmon fillet (1/2 – 1/3 lbs)
  • 3 Tbsp Terriaki
  • 1 Lemon
  • 1 tspn Kosher salt
  • 1 tspn fresh ground pepper
  • 3/4 tspn dill weed
  • 1 Tbsp melted butter
  • 1/4 cup extra virgin olive oil

Preparation

  • Mix melted butter, terriaki and juice from 1/2 lemon
  • Marinade fish in mixture from 1-4 hours
  • Preheat cast iron skillet over medium-low to medium heat
  • Add olive oil to skillet and spread throughout
  • Place salmon fillet in center of skillet (skin side down).
  • Sprinkle kosher salt, pepper and dill weed over slamon
  • Place 3 lemon slices on top of salmon
  • Cook for 2-1/2 minutes with skin side down
  • Turn salmon over and remove skin
  • Pour remaining marinade mixture over salmon
  • Cook for 5 minutes
  • Turn salmon one more time, moving lemon slices to sides of skillet and cook for 2-1/2 minutes.
  • Squeeze remaining lemon over salmon, remove from skillet and serve
