Ingredients
- 1 Salmon fillet (1/2 – 1/3 lbs)
- 3 Tbsp Terriaki
- 1 Lemon
- 1 tspn Kosher salt
- 1 tspn fresh ground pepper
- 3/4 tspn dill weed
- 1 Tbsp melted butter
- 1/4 cup extra virgin olive oil
Preparation
- Mix melted butter, terriaki and juice from 1/2 lemon
- Marinade fish in mixture from 1-4 hours
- Preheat cast iron skillet over medium-low to medium heat
- Add olive oil to skillet and spread throughout
- Place salmon fillet in center of skillet (skin side down).
- Sprinkle kosher salt, pepper and dill weed over slamon
- Place 3 lemon slices on top of salmon
- Cook for 2-1/2 minutes with skin side down
- Turn salmon over and remove skin
- Pour remaining marinade mixture over salmon
- Cook for 5 minutes
- Turn salmon one more time, moving lemon slices to sides of skillet and cook for 2-1/2 minutes.
- Squeeze remaining lemon over salmon, remove from skillet and serve
